Quick Vegetarian Recipes

Two quick vegetarian recipes are Easy Tofu Fingers and Boiled Sweet Potato.  These two recipes are very simple to make and require few ingredients. The two can also be served together.

Easy Tofu Fingers
The Easy Tofu Fingers require one package of firm tofu, seasoning, oil for frying and Catalina, Thousand Island or Blue Cheese dressing. The total seasoning can be one to two tablespoons depending on the flavor sought but do not overdo it. Take the tofu and slice into fingers about the size of the pinkie finger.

Put the seasonings in a clean bowl that has a fitted cover. Then add the fingers, cover the bowl and shake so that the seasoning can cover all the fingers. Let the tofu sit for about fifteen minutes. Heat a frying pan and then add the vegetable oil or olive oil of choice. Add the tofu fingers and fry until golden brown on all sides.

Put the fried tofu on a napkin so that the excess oil can be drained. The tofu fingers can be served with a green salad, potato salad or with rice. The fingers can be dipped in the dressing or served with the dressing on top.

Boiled Sweet Potato
Firstly do not mix up the yams that are served as candied yeam with the actual potatoes that are naturally sweet. This recipe only requires the three or four medium sized sweet potatoes and water for boiling. The sweet potato can be cooked in the skin but for this recipe, wash and peel them.

Put the potatoes in a saucepan and cover with water. Boil until a fork can push through easily. Remove the potatoes from water and slice with a knife. The potato should be served warm and can be a great accompaniment to fish, other seafood or any meat.

Cooking vegetarian no longer has to be boring and simple recipes like Boiled Sweet Potato or Easy Tofu Fingers are tasty and quick to prepare.

My Caribbean Pride

Caribbean people have lots of things in common. We love good food and we believe in "spare the rod, spoil the child." We love to party and we come out in full force for our carnivals. We go to church even if the party just done - we going to church. We have lots of holidays and we truly love this. We take education and sports seriously.

These similarities are similar to most cultures within the world but I can only speak to what I can relate to. I love my Caribbean roots and am a proud United Virgin Islander - per Dara Monifah's catch phrase. I rep both sides of the VI and would not want to live anywhere else in the world.

That's another thing we Caribbean people have in common - we rep our flags with pride and dignity. Don't get me wrong, we are not perfect but we are who we are.

All I can beg of my Caribbean family is to keep heads high and rep the region with pride. We have lots of talent here and we need to all work together to build a good future for the youth.

Prayer for April 14, 2012

Dear God,

Thank you for the bountiful rain that blesses our cisterns, our gardens and our lives. We thank you for nature that abounds around us. We are truly blessed to experience such a great scenery in the British Virgin Islands with all the species of birds, lizards, fruits, vegetables and other flora and fauna. I pray Lord that I will be a good steward of the natural beauty around me and that I will teach my children and others in the community to do the same. Dear Lord, you put us to live in balance and to take care of the land and we ask that you forgive us for our wrongdoings of every kind and especially to Mother Nature. Dear God, we thank you and praise you. AMEN

Bickering Little Siblings

Why do siblings always have to bicker? My children drive me nuts with the constant fighting and tattling on each other. Sometimes I feel like screaming and many times I do. I wish they would just stop!

They are close in age and both are very competitive. The competitiveness is good but the little one always wants to outshine the other one. I am trying with them but they do get my blood boiling. My attempts to get them to play together hardly works unless I am there to chaperone.

I feel that they should be able to play independently without my constant eye over them. If you have any suggestions that you would like to share with me and the world, please leave a comment. I can use any suggestion that you give to keep peace in the house.

The Plight of Civil Servants

Working as a civil servant can be a thankless job with no upward mobility. You'll see other people get promotions and know that they do not deserve it. You'll see certain people get away with all kinds of bad deeds. Yet the bosses will expect you to still perform at your full potential. You'll see them plot for others and fire people for nonsensical reasons.

However, this is the case in private companies too. It's just that the civil service is bigger in my country than the private sector. The civil service always puts on a show that it is so great and in reality it's filled with problems.

As a civil servant, you have options though. You can leave. You can ask for a transfer. You can also just work in the situation and on your private time develop other interests or businesses to keep you challenged and stress free.

There will always be a need for employees in any civil service and you can never get away from nepotism. The great that I know about myself is that I can work anywhere so I'm never stuck. I always have options to reach for.

Do your best on your job and be thankful for what you have. Many are unemployed. I do my hours and get the work done to the best of my ability. After the 8-hour day is finished, my real time starts with taking care of my family and pursuing my other personal interests. I'll continue to do my best and remain thankful for what I have. It only makes me stronger and my resume better!
